Dumpukht is derived from Persian which means ‘air-cooked’ or ‘baked’. It is the blend of Mughlai and Andhra cuisines in the kitchens of the Nizam. It is served in Handi which is a round spherical shaped clay pot. Dum Pukht is a slow over cooking and one of the rich, savory Hyderabadi foods.
